Simple Summer Salad
We are off to a neighborhood
picnic later today so last night
I whipped up this delish salad.
Summer Pasta Salad
1 1 lb box/bag pasta
(I used Barilla Rotini)
1 Green Pepper
1 Red Pepper
1 Medium onion
1 Cucumber
5 Large baby carrots
3 Cloves garlic
2 T Dried parsley
1 Small can black olives
1 Bottle-Ken's Steakhouse
Light Northern Italian
Dressing
Cheese cubes
Cook, drain and cool
pasta, set aside.
Chop all veggies to
your liking.
Drain and rinse black
olives.
Once pasta is cool, add
veggies and 1/4 of the
dressing. Mix together.
Add the parsley and
black olives. Stir together
again. Cover and place
in fridge overnight.
Next morning, pour
another 1/4 of dressing
on the salad, mix, recover
and place in the fridge.
About an hour before
leaving check salad to
see IF it needs more dressing
and add the cheese now or
right before serving.

I love reading salad recipes because everyone makes them a little bit differently. Never would have thought to put cucumber in mine. Duh, one of my favorite summer veggies.

I love this salad! A friend of mine makes it a lot, and I am happy, happy, happy when she shares with me. Guess I need to make it myself!!

Funny, I made the same thing Saturday for a BBQ I went to and it was a hit. I used Paul Newman's Italian dressing though.
