A Secret Ingredient

Good Morning All!

It's time for: Sunday Savor

I have a fun recipe today so
pull up a chair and relax.

Surprise Meatloaf

Take your favorite meatloaf recipe,
divide in half, place one half in the
bottom of a sprayed loaf pan.

Mix together:

3 C Shredded frozen hashrown
potatoes-thawed

1 tsp. Parsley

1/ 2 C shredded cheese

Place the potato mixture on top of
the meatloaf half in the pan and
top with the remaining meat
mixture. Pinch close if necessary.

Bake for 1-1/4 hours. Sometimes the
potatoes may take more or less time
to thoroughly cook. If in doubt cut
into the loaf to check.

This recipe comes from the Penzey's
Spice Catalog. They suggest that this
will serve 10. At my house it served
2! We did have leftovers for lunch.
It was yummy good.

Let me know if you try this.

  3. Is that a low-carb recipe? Just kidding. It does sound yummy though. I saw a recipe on Pinterest today where they put onion soup in the middle of the meatloaf. Not mixed in, but sort of like yours. It sounded a little messy, but good :)
