ReplyDeleteYou're right about choosing the crummiest days to do stuff...and like you, my husband and I used to freeeeeeeze while putting up Christmas decorations!
How's about turning that zucchini into wonderful, moist, chocolate zucchini cake with chocolate icing? It's sort of like veggies, but with chocolate. :)
I also work in education. I'm a middle school special ed paraprofessional and may I say, thank heavens for having summers off--let the games begin!

ReplyDeleteAfter witnessing tha zucchini first hand I can vow it enough to feed and army, maybe two! I don't think your picture captures just how humungous it really is! For something simple, you could just slice it, drizzle with EVOO, S & P, grill or bake. I also like to bread and fry then add some parmasean....and like Carol said, Zucchini bread is wonderful, especially with mini-chocolate chips. I know veggies and chocolate sound weird but trust me it is good!

OH gosh. I'm the last person to help with vegetables. I hate them. Seriously..hate them. You could always go to some recipe sites on line. They offer up some good stuff!
