Simple Soup for One





Last week when I was sick,
I was hungry for something
"comforting to my tummy."
This came to mind, now I
know that most everyone
knows how to make potato
soup BUT on the off chance
that someone doesn't
here is my version.


Potato Soup (for 1)

Five small potatoes,
peeled and cubed
3/4 C milk
1 T butter
2 slices of cheese-torn
in pieces (mine was
American)
Parsley (optional)

In a small saucepan cook
potatoes until almost tender,
drain and place back in pan.
Add the milk, butter and
cheese to the potatoes. Stir
together and let simmer until
all is blended. Before serving,
add parsley if desired.

Enjoy!

  3. Potato cheese soup is one of my favorites, but something I can't eat anymore. It sends my blood sugars too high.

    1. Oh Cathy! I can totally relate. And when I was gestational diabetic...I could eat ice cream and have lower blood sugar readings than if I ate mac and cheese or mashed potatoes, etc. Those starchy carbs take so long to process its just torture on our blood sugar levels! HUGS!

  5. I'm looking forward to making this one the next time the daddy is on-duty!!! My kiddos don't like potato soup and so I'm always stuck with a stockpot full (not that that's a bad thing! LOL). So glad to see you're feeling better. Hugs.

  7. glad you are feeling much better....I do enjoy a nice warm bowl of potato soup! My recipe is very similar...only difference is that I use velvetta cheese and I add a can of cream of mushroom soup! My family is always happy when I serve up a hot bowl of PS. Stay well and enjoy the week...
