Simple Soup for One

I was hungry for something
"comforting to my tummy."
This came to mind, now I

Potato cheese soup is one of my favorites, but something I can't eat anymore. It sends my blood sugars too high.ReplyDelete
Oh Cathy! I can totally relate. And when I was gestational diabetic...I could eat ice cream and have lower blood sugar readings than if I ate mac and cheese or mashed potatoes, etc. Those starchy carbs take so long to process its just torture on our blood sugar levels! HUGS!Delete
That is a tough one. It is getting toDelete
the point where nothing is good for us.

I'm looking forward to making this one the next time the daddy is on-duty!!! My kiddos don't like potato soup and so I'm always stuck with a stockpot full (not that that's a bad thing! LOL). So glad to see you're feeling better. Hugs.ReplyDelete
Thanks, enjoy it when you make it.Delete
I wasn't a big fan of most soup when I
was a child. Sure do like it now!
