Yum! Yum!

Sunday Savor- ************************** Sunday's will be bringing you a recipe each week so pull up a chair and relax . ************************** Today's recipe : Southwest Stuffed Peppers (Simple and Delicious and Melinda's kitchen) 8 medium green peppers 1 lb. lean ground beef Taco seasoning to taste 1 can (14 1/2 oz.) diced tomatoes and green chilies, undrained 2 small cans of Hunt's tomato sauce-no salt added 1 1/2 cups water 1 envelope (5.4 oz.) Mexican-style rice and pasta mix 2 cups minute rice cooked 2 cups ( 8oz.) shredded Mexican cheese blend Cheese slices per pepper 1/2 inside and the other 1/2 on top ************************** Cut tops off peppers and remove seeds. In a dutch oven, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water; set aside . In a large skillet, cook beef over medium heat until no longer pink; drain. Add diced tomatoes, water and pasta mix. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until liquid is absorbed. Place 1/3 cup rice mixture in each pepper; sprinkle each with 2 tablespoons of cheese. Top with remaining rice mixture. Place in a greased 13 x9 baking dish. Cover and bake at 375 degrees for 25 minutes. Sprinkle with remaining cheese; bake 5-10 minutes more or until the cheese is melted and the peppers are tender. These instructions are for the original pepper recipe if you choose to do the substitutions then follow the instructions in black. I've changed this due to diet restrictions. **************************** Serves--8 Prep--25 mins. Bake 25-30 mins. Cost--$1.93 per serving According to the magazine **************************** I know it's HOT out but this is a great recipe for those Farmer's Market peppers. Enjoy!!   2. Oh Melinda...Good looking recipe. Can't beat that cost per serving either.

    Last year I planted my cucumbers and squash next to each other. They cross-polinated and I ended up with big yellow cucumbers. I was shocked!

  3. Melinda: I love stuffed peppers. My husband does not. However, as I was reading your recipe, I realized that he likes everything in the pepper except the pepper. Well, I'm going to make them. I shall just "decant" his onto the plate--and, maybe I'll eat his pepper as well as mine while he's enjoying the "stuffed" part. Why didn't I think of this before?

  7. Your stuffed peppers recipe looks yummy. Have you ever tried to make it with red peppers? That is an interesting color for a cucumber! It is so much fun to visit the farmers market and see all the interesting varieties of tomato, corn, squash, etc...
