Make Someone's Day!

Tomorrow--October 26th
is Make a Difference Day.
This is a day where groups
of people (small and large)
get together to help others.

What are your plans for
tomorrow?
Take some time to help
someone else.

While the large groups
tackle the big projects,
here are some things
you can do by yourself
or with your family.

Rake leaves
Sweep porches or
driveways
Run errands for a
neighbor
Smile at a stanger
Give a hug
Spend time with a
friend
Call someone you
haven't heard from
for awhile

Here is a story I just
think is so neat! (From
Women's Day 2013)

During a visit to the
San Francisco Wharf
during a road trip and
around the U. S., my
husband and I were
treated to a great act
of kindness. When the
parking meter wouldn't
take our credit card, a
young man eating lunch
with friends came over
to see if he could help.
After my husband used
the only quarter he had--
which gave us exactly
4 minutes on the meter--
the man told his friends
to empty their pockets
of change. They came up
with 15 quarters, which
they immediately put in
the meter. When my
husband tried to repay
them, they refused to
take any money and
insisted we go have
a wonderful afternoon.

Now isn't that the way
things should be?

Share with us what you
do tomorrow!

It's Coming!!!!!!

Somehow I missed posting
yesterday. First day back
to school after being sick,
I'm sure that was the reason.
Ha! Ha!

Well here we are, just under
10 days until the BIG Halloween
fun!

Did you know--

8 billion dollars is how much is
spent on Halloween. Oh my!

A typical family spends $80 on decorations, costumes and treats.
This seems a little low to me. One
can spend 80 bucks on candy alone
or on costumes etc.

60%  of Americans decorate their
homes with fake cobwebs, spooky skeletons, lights etc.

Are you ready??

Simple Soup for One

Last week when I was sick,
I was hungry for something
"comforting to my tummy."
This came to mind, now I
know that most everyone
knows how to make potato
soup BUT on the off chance
that someone doesn't
here is my version.

Potato Soup (for 1)

Five small potatoes,
peeled and cubed
3/4 C milk
1 T butter
2 slices of cheese-torn
in pieces (mine was
American)
Parsley (optional)

In a small saucepan cook
potatoes until almost tender,
drain and place back in pan.
Add the milk, butter and
cheese to the potatoes. Stir
together and let simmer until
all is blended. Before serving,
add parsley if desired.

Enjoy!

PS: I wanted to THANK
everyone for the well wishes,
hugs, prayers and comfort I
received while I was sick. I
am almost 100 % and on the
road back!

A Little This, A Little That

Candy Corn Cupcakes

(From Family Fun
Magazine October
2013)

Line two muffin tins
with paper liners, make
a batch of vanilla cake
mix batter according to
the package, then evenly
divide it between two bowls.
Stir in 8 drops of yellow food
coloring into one of the bowls.
Stir 34 drops of yellow and
31 drops of red food coloring
into the other bowl.
Evenly distribute the yellow
batter into the tins, then top
with a layer of orange batter,
making sure to cover the
yellow batter.Bake the cup-
cakes according to the package
directions and let them cool.
Just before serving, whip up
a pint of heavy cream with a
1/4 C sugar and 1 tsp vanilla
extract until stiff.
Using a pastry bag with a star
tip or a sandwich bag with the
corner snipped off  pipe a dollop
of whipped cream onto each
cupcake, then add a piece of
candy corn to each one.

Makes 24 cupcakes.

Boo!

stand from an early summer
garage sale? Well, here it is
all dolled up for Halloween!
The jack-o-lantern tea light
is from Old World Pottery
(bad store :) ) and the mini
pumpkin table scatters are

Bad Words

UNEMPLOYED

TERMINATED

FURLOUGHED

SHUTDOWN

These are words that I
have been hearing ALOT
over the last weeks and
months. I am having lunch
with a friend who I just found
out that has been terminated
from her job, because her
company didn't want to pay
for their insurance.
(She is a single Mom too.)
We know so many people
that are living this nightmare!
We have lived ourselves for
2 years and are still working

on getting a back to where
we were before Ken got laid
off!

I don't know the answer to
any of this except that
SOMEONE needs to get off
their rear and find a solution
to this soon this and it is not
fair!

Please say some prayers for
this whole situation!!

Help for Leftover Canned Pumpkin

One 15 oz. can contains
about 1 1/3 C of pumpkin
and usually a recipe calls
for 1 C.
What do you do with the
rest?

Store it:
Canned pumpkin should
last 5 to 7 days in a sealed
container. (in the fridge)

           or

3 months in the freezer
(in an airtight container or
freezer bag)
BUT leave a little wiggle room
because pumpkin expands
when frozen. If there is too
much inside the lid might pop.

Use it:
When making Mac and Cheese
stir pumpkin into the cheese
sauce for some vitamins and
fiber. Thin the sauce with milk
or broth if it gets too thick.
In Hummus, add pumpkin to the
chickpeas, tahini, lemon juice,
olive oil and spices in you food
processor.
Add pumpkin to Cream Cheese
by folding in with some cinnamon
or pumpkin pie spice to spread on
toast or bagels.
Put a little pumpkin in your
morning Oatmeal. Stir in with your
milk.
Add some zip to your Chili by
stirring in the pumpkin with the
liquid ingredients, stir well.

A 1/2 C of canned pumpkin gives
you all the Vitamin A you need for
a day!

Give it up for PUMPKIN!!!!!
