Update

Hello---
Just a little update. Thanksgiving
came and went and I got to spend it
with a sickness! Oh, Yea.
We had a nice Thanksgiving as one
of my past posts shows, then on
Saturday we got to see the rest of the
fam, Ken's sister and her family.
Yersterday I was scheduled for a Dr.
appt. so she gave me some meds for
my VIRAL UPPER RESPITORY
infection. Trying to catch up on
blogs. So I'll see you soon.

Family and Food

Happy Thanksgiving to all! Hope you had a fantastic holiday with your family/ friends. Here is the star of our holiday. Ken and I deep fried a 3.5 lb. turkey breast. Was it ever good! You bet it was!

**Update on Ken. He is
doing great after his eye
surgery. The second cataract
was removed and now he
is in recovery mode.

Ahoy Matey!!!!!

Well, here he is. No, he has not
become a pirate! He is fresh from eye surgery. Cataract to be exact.
Some of you will remember that back
in Februrary 2010 he had the first
one removed. Today he had the other
one removed.
Ken is younger than most who suffer
from these but it is not unusual. He
will be able to recover over the holiday
week and should be fresh to Rock and
Roll come Monday morning.
We would like to Thank all of you for
your thoughts and prayers during this
time. You are GREAT!!!!

Thanksgiving Yum

Sunday Savor
Pull up a chair and relax!

Since Thanksgiving is almost
upon us I thought I would share
a pie recipe that puts a different
twist on Pumpkin Pie.
This will be on our menu this
year!
Pumpkin Mousse Pie
1 1/4 cups of cold fat-free milk
1 pkg (4 serving size) vanilla
fat-free sugar free instant
pudding and pie filling
1 tablespoon pumpkin pie spice
1 cup canned pumpkin
1 tub (8 oz) frozen reduced
fat non dairy whipped topping
thawed, divided
1 Graham Cracker Reduced Fat
Pie Crust
1---In a large bowl beat milk, pudding
mix and spice with a wire whisk for
1 1/2 minutes. Whisk in pumpkin.
Fold in 1/2 the topping. Spread in the
crust.
2--Top with the remaining topping.
3--Refridgerate at least 2 hrs. Garnish
if desired. Store in the fridge.
Makes: 8 servings. Enjoy!

Super Easy!

It's time again for SUNDAY
SAVOR! Today's recipe is so
easy! Pull up a chair and relax.
It is so easy that I am not using
a "recipe" format.
Mexicali Beef Mac and Cheese
1--Brown 1 pound of ground
beef, drain and set aside.
2--Make your mac and cheese
box or homemade. Add taco
seasoning to your taste while
cooking.
3--Mix the beef into the mac and
cheese then add Rotel tomato
and chilies to your mixture. (I'm
not much into heat so I used the
Mild version and mixed according
to our taste palate. Let your mixture
sit on low for about 5 - 10 minutes to
allow flavors to "marry." Serve with
veggies or a salad and ENJOY!

Thanksgiving Fun

image: Country Living As we are preparing for our Thanksgiving feasts, I thought I would share some interesting tidbits regarding THE big day. This was a poll from BHG for their Facebook readers. When asked what one item would be missed on Thanksgiving if it wasn't served. 58%---Stuffing 18%---Sweet Potatoes 16%---Cranberry Sauce 8%---Pumpkin Pie Now I know that I am in the minority when it comes to these things, because I wouldn't miss any of them! I don't care for any of it. I would miss: Mashed Potatoes, Corn, Green Salad/Green Beans, Apple Pie What would you miss if it wasn't served for Thanksgiving??? ~Keep on Dreaming~

Fun Friday

This evening Ken went with a buddy
to play pool and I took advantage of
that time for "me" time. All week
(as if I have had the time) I have been
thinking about "comfort foods", I
blame this on the changes in the
weather and the upcoming time change
on Sunday morning.
So, I got out some of my recipe "messes"
and cleaned them up--choosing ones
that were tried and true and ones
that I think I will really try. I got rid
of the ones I knew were "no-gos."
I think I mentioned sometime this
past summer that I am trying hard
to get my recipes under control.
As you can see in the second photo
I have a really nice recipe notebook
that was given to me by one of my co-
worker's. It came with dividers, page
protectors, recipe cards and some
labels.
Main dishes was the category of choice-
I wanted to find some of my soup and
casserole recipes for the upcoming
weekend and the new work week.
I found some BUT I know I have more!
I have way too many recipes. But I am
trying at least. Control will reign soon.

It's My Birthday!

This is where I spent my birthday. Mr. Ken took me here for a delicious birthday dinner. It is an Italian feast for the eyes. I had ceasar salad, house salad, bread, chicken spedini, fish, hash brown potatoes and fet. alfredo. Ken had sausage and peppers, different salads than I and bread. For dessert we had a chocolate mud cake with vanilla sauce, raspberry crostini and rainbow sherbet! Two very happy people with full tummies!

and lavender roses with white car-
nations. He did well didn't he?
My present was a Digital Camcorder
that also takes pictures.
It came with a case, tripod, software,
memory card, batteries, screen
protectors etc. etc. :) This will be
so fun for family events and other
fun times. My classroom gave me a party and I recieved gifts from some
of the gals I work with. Many messages
from friends and family too. It has been
a GREAT birthday!!
